Limited edition rum, made from the selection and balanced blend of exceptional barrels, from vintages extinct in the cellar: de Maestro 2010, Familia 2005 and Tradición 1999.
The result is a Rum of the highest quality, balanced and sublime, where notes of raisined fruits and leather stand out on a spicy and saline background.
After several stages of assembly throughout a meticulous maturation process, the barrels that will make up this rum are selected. In the maturation of these rums, oak barrels of different origins and toasting levels are used. Finally, this rum is rested, for two more years, in barrels previously used for the aging of red wines, with the aim of reaching its full maturation and complete balance.
Due to its aging and peculiar characteristics, it looks more like a very old brandy than a rum. It is a highly complex rum that requires time and patience to be consumed with understanding. Once served, it is very changeable due to the effect of oxidation, surprising the large number of nuances that it is capable of expressing.
Our production process follows the traditional recipe of our ancestors. It all begins with La Zafra with the sugar cane harvest, between March and July. Grinding is then produced, the process of crushing and pressing the sugar cane, by which the juice or guarapo is obtained, which, once extracted, is naturally fermented for about 30 hours and becomes distilled, by heating. direct from guarapo and continuous distillation, in an Egrott column alembic, over a live fire of heather and Falla wood. The brandy obtained is deposited in American oak barrels at a percentage of 65% alcohol.
