The covered press of the old winery was built in 1775 on the volcanic layer of the eruption that occurred from 1730 to 1736. The El Grifo vineyard is in the area covered with volcanic sand and lava, protected by dry stone walls. All viticultural work is necessarily manual, passing the tradition from generation to generation.
Volcanic Malvasia: It is the most important and abundant variety of Lanzarote. In other islands of the Archipelago, from where it had disappeared, it has been reintroduced since the end of the 20th century. It is not found, not even testimonially, outside the Canary Islands. According to studies, it is the variety with which the old Canarian wines were made, the Canari Wine, which reigned in Europe between the mid-16th century and the entire 17th century, disappearing throughout the 18th century due to substitution by other more productive white varieties, like the Listan Blanco.
